Citrus Roasted Sea Bass
The other day I was at the grocery store and my daughter yelled, “Mommy! Do they have fish here? I want to poke it in the eye!” A year ago she saw a dead pig head on TV (I think I was watching Bizarre Foods) and she said, “Yummy! Pork!!” I may have gone too far when it comes to de-sensitizing my kids about where their protein comes from. One of my biggest pet peeves is when people are squeamish when they see a whole chicken or any meat that resembles the animal. To me if you are going to eat chicken nuggets, why ignore that it comes from an actual chicken?
In the summer I really like to eat more seafood. This dinner is quick and easy. Serve with a salad for a nice dinner for a hot day.
Citrus Roasted Sea Bass (serves 4)
Ingredients:
- 2 sea bass whole, gutted and scaled
- 1 orange, sliced
- 2 lemons, sliced
- 6 stalks of celery, chopped
- 4 tablespoons olive oil
- salt and pepper
Preparation:
- Preheat oven to 450 degrees.
- Pour olive oil onto baking sheet. Place oranges, lemons, and celery on the baking sheet. Stuff the cavity of the fish with lemons and celery tops (if you don’t have the tops you can also use parsley). Rub olive oil on fish and season with salt and pepper. Lay on top of fruit and parsley.
- Roast in oven for 20 minutes and serve.
